homemade peanut butter cups

I made a batch of these last night and they are so darn good and so super easy that I had to share this recipe!

Homemade Peanut Butter Cups

What you’ll need…

40-50 1″ miniature paper baking cups
9 , 1-oz. squares of white baking chocolate
1-1/2 c. creamy peanut butter; divided
8, 1-oz. squares of semi-sweet baking chocolate
1/2 c. chopped peanuts

Arrange baking cups on a cookie sheet or jelly roll pan and set aside. Melt the white chocolate and 3/4 c. of the peanut butter in a saucepan over low heat, stir constantly until melted and smooth. Use a teaspoon to spoon this mixture into the arranged baking cups. Refrigerate for 10 min. While refrigerating, chop the peanuts and set aside. Melt the semi-sweet chocolate and another 3/4 c. of peanut butter in the saucepan over low heat; stir constantly until melted and smooth. Use the teaspoon again to spoon this mixture into the baking cups on top of the white chocolate mixture. Sprinkle with the chopped peanuts; refrigerate overnight. Makes about 40, maybe a few more.  Enjoy!!

This is a quick, easy recipe that I was able to put together in about 30-40 minutes. They came out so delicious I decided to give them as neighbor gifts this year.  I created a box  using A Muse|Studio twas the night and cherry card stock plus vanilla shimmer paper and put together boxes of 8 peanut butter cups in each, decorated with paper snowflakes and some baker’s twine + a little tag. I know these will be a big hit!!

Here they are, in the box, ready to be covered and tagged…

Here they are covered, tagged and ready to give…

Hoping this inspires you to add a little homemade to your holidays, if not this year than next!!
